What’s the experience like?

“You’ll want to smell this,” our guide said, waving us over to a patch of lavender just off the dirt path. I was still fiddling with my helmet strap (never gets easier), but the scent hit me anyway—earthy and sweet, almost sticky in the morning air. The bikes felt lighter than I expected, especially after that first hill outside Solvang. Li, our guide, had this way of pointing out things you’d never notice—like how old some of these olive trees are (“Spanish missionaries planted them,” he said, and then shrugged like it was no big deal). I tried saying ‘lavanda’ in Spanish; Li laughed and corrected me in Danish, which made sense once you see all the windmills around here.

The ride through Ballard Canyon was quieter than I thought it would be. Just us, a couple hawks overhead, and that soft crunch of tires on gravel. At one point we stopped for snacks in Solvang—tiny pastries from a bakery that smelled like butter and cinnamon. There’s something about eating outside that makes everything taste better. It got warmer as we rode on, sun bouncing off rows of grapevines. My hands got dusty from the handlebars; I didn’t mind.

I’m not really a wine person (or wasn’t?), but tasting at those wineries changed something for me. The sommelier-level guide poured us a glass and talked about the soil like it was his own backyard. The olive oil tasting was almost meditative—peppery and green on the tongue—and then we sat down for this picnic lunch under a giant oak tree. Local cheese, bread that crackled when you tore it apart… honestly, I still think about that view: golden hills rolling out forever while we passed around another bottle.
