What’s the experience like?

I didn’t expect the first pour to taste like spring after rain, but there it was—something crisp and almost electric. We’d just arrived at Between The Lines Winery in Niagara-on-the-Lake, and I was still shaking off the drive when our wine educator, Mark, handed me a glass of their Riesling. He grinned when I hesitated before the first sip—“Just let it sit for a second,” he said, which made me laugh because I’m usually impatient with these things. The room smelled faintly of wood and grapes, with a low hum of voices from another group nearby.

We stood around the tasting bar (no vineyard tour here, just straight to the good stuff), and Mark started talking about how their Lemberger Reserve is made—apparently it’s not that common in Ontario? I tried repeating “Lemberger” back to him and probably butchered it; he didn’t correct me though, just smiled. Four wines in total, each one different enough that I kept glancing at my notes like I’d forget what was what. There was this moment with the third glass where everyone went quiet for a beat—maybe we were all just processing how earthy it tasted, or maybe we were thinking about lunch.

Honestly, I liked that it wasn’t rushed. No one pushed us to finish or move along. Mark answered every question—even the odd ones (“Does this pair with chips?”). When we left, there was a little chill in the air outside and my hands smelled faintly of cork. I keep thinking about how something so simple—a few pours at a bar—felt personal because of who poured them.
