What’s the experience like?

The first thing I noticed was the sharp hiss of beer hitting glass — not just any beer, but Pilsner Urquell, and apparently there’s a right way to do it here in Prague. Our guide, Jakub, grinned as he slid us behind the bar (honestly, I never thought I’d be allowed back there) and started talking foam. “It’s all about the head,” he said, tapping the side of his glass for emphasis.
