I didn’t expect the first sip of Irish coffee near Trinity College to actually wake me up — not just the caffeine, but the way the bartender showed us how to swirl the cream just right. Our guide, Aoife, had this way of making every stop feel like she was introducing us to old friends. The city felt softer in her company. She laughed when I tried to pronounce “sláinte” before we toasted (I still don’t think I nailed it). There was this faint smell of rain on stone as we walked — classic Dublin, you know?

The bakery was warm and smelled like butter and something sweet I couldn’t place. We tried sausage rolls straight from the oven. One of them was their “secret” dish — Aoife winked and wouldn’t say what made it special. People behind the counter chatted in that quick Dublin way, half-jokes and stories flying around.
